Vanilla Cookie Recipe

Ingredients:

100g butter (softened)

175g granulated sugar

1 egg

1tsp vanilla extract

225-275g self raising flour

Sprinkles (optional)

For water icing:

Icing sugar

Water

Food colouring

For royal icing:

Icing sugar

Egg white

Food colouring

1tsp lemon juice

Equipment:

Mixing bowl - large and small (if you're using icing)

Spoon

Sieve

Hand mixer

Rolling pin

Cookie cutters

Whisk (if you're using icing)

Method:

Using a hand beater or mixer, beat the softened butter and sugar well - until nice and creamy.

Add the egg and vanilla and beat again - scraping the sides as you go

Sift in the flour and fold it into the butter mix with a spoon. Use your hands to form a ball of dough and wrap it in cling film to refrigerate for at least 30 min.

In the meantime, if you want to use icing you can make it now...

For water icing, add a little water at a time until a paste forms - not too runny, thick enough to ice with. You can keep it white, or separate into bowls to make different colours by adding a drop or two of food colouring and mixing it in.

For the royal icing, whisk the egg whites lightly and add icing sugar a little at a time, whisking continuously until all incorporated. Then mix in lemon juice until smooth and shiny.

Now roll out your dough on a floured surface and cut out the biscuits with your cookie cutters.

Lay them on parchment paper on a baking tray with a bit of space inbetween each one.

Bake in a preheated oven at 180 degrees for 8 - 10min.

Turn the tray halfway through baking to ensure an even bake.

Leave to coll before icing your biscuits any way you like, adding your sprinkles for colour and fun!Â
